Rooted in Tradition
If You Cheese started with a simple idea and a cherished family recipe for dough, a tradition that spans generations from Italy. Our dough is a daily labor of love, capturing the essence of old-world style and flavor. Our handcrafted Stromboli, crafted with the finest locally sourced ingredients, grace our menu. Complementing them are our signature grilled Italian sandwiches and made-from-scratch Pasta Bowls, creating a harmonious balance. And for the perfect sweet ending, indulge in our World Famous Cannoli, boasting a flaky crust and lusciously creamy chocolate chip filling.
A Journey of Transformation
Our adventure began with the discovery of a vintage Shasta trailer in need of more than a little tender loving care. Over the course of nearly a year, we undertook the ambitious task of transforming this barn find into the ultimate mobile kitchen. Starting with a clean slate was essential for our truck’s rebirth. The process involved stripping everything down to the bare studs, laying new flooring, constructing new walls, and revamping the plumbing system. The placement of equipment was a meticulously thought-out process that demanded creativity. Our conveyor oven, warmers, cold table, sinks, and more were strategically installed. Through dedication and ingenuity, we successfully transformed a vintage Shasta into the heart of our Mobile Stromboli Food Truck.
